Vanilla Bean Creme Brulee and Raspberries

Creme Brulee is a "MUST" with vanilla. This recipe serves 6 people. It requires very little prepping and the end result is mouth watering.


2 1/2 cups (625ml) thin cream

1 vanilla bean

6 egg yolks

1/2 cup (100g) sugar

2 tablespoons brown sugar

A bag of Raspberries


· 1st Step

Preheat oven to 160°C (320 Fahrenheit.

· 2nd Step

With a knife split the vanilla bean in two on the length side and scrape the seeds out. The rest of the bean can be put in a sugar jar to make some vanilla sugar! Place 2 1/2 cups (625ml) of cream in a medium saucepan and add the vanilla seeds you obtained from the bean. Mix the content of the pan and place over medium heat and bring to a boil. Remove from the heat and let it seat for at least 10 minutes.

· 3rd Step

In a medium bowl whisk the egg yolks together with the 1/2 cup of sugar together until well combined. Then slowly whisk the cream into the egg-yolk mixture until well mixed. Pour the content among the prepared dishes. Pour hot water into the roasting pan in order to reach halfway up the sides of the dishes.

· 4th Step

Bake in until the creme is set (approximately 30 minutes) and then remove from oven. Transfer the hot dishes onto an oven tray and set aside to cool for at least 30 minutes. Once cooled cover place in the fridge for a few hours to chill.

· 5th Step

Preheat a grill on high. Sprinkle the creme brulees with brown sugar. Cook under the grill until the sugar caramelise (1-2minutes) and then add 3 raspberries on top of each dishes! Et voila, bon appetit!
