Try these delicious Vanilla Chai Cupcakes!
RECIPE
For cake:
1 stick unsalted butter
1 cup white sugar
2 tsp. MUST vanilla extract
2 eggs
1 1/4 c flour
1/2 buttermilk
1/2 tsp. baking soda
1/2 tsp. apple cider vinegar
2 1/2 T. chai spice mix
For chai spice mix:
1 1/2 tsp. ground cardamom
1 1/2 tsp. Ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
For buttercream:
2 sticks unsalted butter
1 tsp. MUST vanilla extract
2 cups powdered sugar
Remaining chai mix
Preheat oven to 325 degrees. Mix chai spices together. Cream the butter and sugar together. Slowly add in vanilla, apple cider vinegar and the eggs. Add chai spice mix. Mix together the flour and baking soda separately. Alternate folding in the flour mixture and butter cream. Fill cupcake tray and bake for 17-23 minutes. Allow cupcakes to cool before putting on buttercream.
